Inktober – Plum Preserves

Yes, I have a really old stove – and I love it.

I am intrigued by the small yield of this recipe, but “normal” jamming calls for an equal amount of fruit and sugar when working with pectin. In this batch, I used 3 pounds of plums, 1 1/2 cup of sugar, the juice of one huge lemon – that’s it. I wound up with about 4 – 8 oz. jars of preserves. The preserves are incredibly good.
