Happy St. David’s Day

St David is the patron saint of Wales. He is known for founding monastic orders throughout the country and for supporting Welsh independence. It is rumored that he urged Welsh soldiers to wear leeks on their helmets so that they could be easier to recognize by their compatriots. One could argue that they would also be easier to recognize by the enemy.

Daffodils and leeks are symbols of Wales and they bloom in abundance in the spring around March 1.

Celebrate by cooking up a steaming pot of caul (lamb and vegetable stew) and feasting on Welsh cakes (which are delicious!)
